Blueberry Pancakes
This recipe serves 2
Ingredients:
2 whole eggs
1 1/3 cups soy flour*
2 cups 1% milk
1 cup blueberries
2 2/3 teaspoons olive oil
2 tablespoons strawberry extract**
Cooking Instructions:
Combine eggs, soy flour, milk, strawberry extract, and blueberries in a small bowl to form a thin batter.
Heat 2/3-teaspoon oil in a nonstick sauté pan. Pour batter into pan to make small (two-inch) pancakes. Batter will make about 24 silver dollar sized pancakes. The pancakes will cook to a golden brown color and will resemble buckwheat pancakes in color and flavor.
As blueberry pancakes are cooked, place on two serving plates and keep warm. Repeat process until all the batter is used.
NOTES:

* Available in some health food stores.
** Strawberry extract is needed in batter to give it the buckwheat taste and to moderate the strong flavor of the soy flour.
