Stir-Fry Chicken and Snow Peas
This recipe serves 1
Ingredients:
1 cup snow peas
4 ounces chicken tenderloin
3 cups spinach
1/4 cup white kidney beans
1 1/2 cups mushrooms, sliced
1 1/2 cups bean sprouts
1/2 cup scallions, sliced
1 teaspoon olive oil
1/2 cup chicken stock
2 teaspoons soy sauce
1 teaspoon cider vinegar
2 teaspoons Chinese five-spice powder
Hot pepper sauce to taste
Cooking Instructions:
Use a nonstick sauté pan, stir-fry chicken in hot chicken stock for 2 minutes. Add mushrooms and cook 3 minutes.
Stir in kidney beans, snow peas, sprouts and scallions. Cook 2 minutes more. In a small bowl mix oil, soy sauce, vinegar, five-spice powder, and hot sauce. Whisk to blend.
In a salad bowl, combine spinach, chicken and vegetables (use slotted spoon to remove from sauté pan). Pour dressing over salad and toss to coat.
