Orange and Cardamom Reduction

Makes about 1/4 cup

  • 1 1/4 cups freshly squeezed orange juice
  • 4 cardamom pods
  • 1 garlic clove, split
  • Pass the orange juice through a fine sieve into a pan and add the cardamom pods and garlic.

    Reduce very slowly until thick and syrupy. Leave to cool and store in the refrigerator.

    Bring to room temperature before serving.

    Omit the garlic if using reduction for poaching fruit
