Mini Beef Filets with Horseradish Cream

The flavors of the crisp crostini topped with beef and a little horseradish cream has remnants of roast beef and Yorkshire pudding!

This recipe serves 12

Ingredients:

  • 2 pounds beef filets, center cut, trimmed
  • 2 tbsp olive oil
  • 2 tbsp crushed black pepper
  • Sea salt
  • 1/2 cup creme fraiche
  • 2 tbsp horseradish, drained
  • 1 tbsp fresh thyme, chopped
  • 48 crostini
  • 3 large sprigs of fresh thyme for garnish
  • Cooking Instructions:

    Cut the beef lengthwise into 4 equal pieces to form 4 mini filets. Brush the entire surface of each filet with olive oil, and rub 1/2 tbsp of black pepper into each mini filet. Season to taste with salt.

    Heat 1 tbsp of olive oil in a large skillet over high heat. When the oil is hot, add 1 or 2 filets and sear, turning frequently, until the outside is brown and the center is still rare, 3 to 4 minutes. Remove from the skillet and set aside to cool. Repeat with the remaining filets.

    Mix together the creme fraiche, horseradish, and chopped thyme in a bowl. Season to taste with salt and pepper.

    When the filets have cooled, slice each into 1/2-inch-thick slices, place on the crostini, and top with a little Horseradish Cream Fraiche. Garnish each with a small sprig of thyme.
