| From Foodvision.com Broiled Shrimp with Lemon and Basil
Italian cooks season many foods with the simple and elegant combination of lemon, garlic, and olive oil. Here, this traditional blend of flavors -- enhanced by the addition of fresh basil and a hint of vermouth -- serves as a marinade for broiled shrimp. When the weather is warm, skewer the shrimp and grill them outdoors. This recipe serves 4 Ingredients: Cooking Instructions: In a large bowl, combine basil, garlic, vermouth, oil, lemon zest, lemon juice, oregano, salt, and pepper. Add the shrimp, tossing to coat. Set aside to marinate for at least 30 minutes at room temperature or for up to 4 hours in the refrigerator. Preheat the broiler or grill. Under the broiler or on the grill, toast the bread on one side. Set aside. Broil or grill the shrimp 6 inches from the heat, turning once, for 3 minutes, or until just opaque. Place 2 slices of toast on each side of 4 plates. Top with the shrimp and serve.
